John's "Flatwater" Enchiladas

By popular demand, here is the enchilada recipe from the St. Pat's Day party. I don't want to compromise the intent of this fine publication, but good food is listed as a function of our club. Let it be known that we draw the line at "Decorating Ideas for the Home and Office."

2 lb. boneless chicken breast
2 med. yellow onions
1 15 oz. can drained corn. (or frozen)
2 15 oz. cans refried beans
1 15 oz. can drained black beans
2 pkg. Old El Paso taco seasoning powder
10 - 12 large flour tortillas
2 cans Old El Paso enchilada sauce
Chopped black olive
Chopped tomato
Chopped green onion
Chopped green pepper
Grated colby-jack cheese

Cut chicken into small pieces, and brown in a large pan with a bit of olive oil. When chicken is about half done, add the 2 yellow onions (finely diced), and the taco seasoning. When chicken is cooked and onions start to brown, reduce heat, and mix in the refried beans, corn, and black beans. It should be thick and sticky like Castrol bearing grease.

Grease a large baking pan. Spoon 2 -3 heaping tbs. of mixture onto a tortilla shell, roll and place in pan. When all enchiladas are in the pan, cover with sauce, cover the pan with foil, and bake at 300 until the sauce bubbles.

Remove foil, and cover enchiladas with grated cheese. Garnish with the green onion, tomato, green pepper, and olives. (or whatever you like) Pop it back in the oven until the cheese melts.

If you serve chips and salsa, rice, and a tossed salad , you can figure one enchilada per person. It is possible to eat two, but that is about the limit.

Buffy Bits Again ..A True Story

Fact: Some late model MG's were fitted with an overdrive unit identified as the Laycock LH Overdrive.

Phone rings: Hello, this is the unnamed large mid-west British car parts place. This is Buffy, can I help you.

Me: Yes, I received an order yesterday that wasn't complete.

Buffy: May I have the order numbers sir? Me: Yes it is 1234567.

Buffy: Just a moment sir. (2 minutes later)

Buffy: Yes sir I have your information. What was the problem.

Me: The description in the Winter Sales Catalog reads. "1968-76 LH overdrive transmission" on page 69.

Buffy: Yes sir.

Me: The transmission arrived but it doesn't have an overdrive unit on it.

Buffy: One moment sir.........Sir, the Left Hand overdrive is not included. You have to buy that separately.

Me: Left hand overdrive.

Buffy: Yes sir.

Me: But the catalog specifically lists LH overdrive transmission.

Buffy; Yeah, but in the other catalog it lists the left hand overdrive separately

Me: Left hand?

Buffy: Yeah.

Me: Buffy, what would you do if I needed a Right Hand overdrive for my B.

Buffy: Just a moment sir.........I am sorry sir, we don't carry the right hand overdrive for the MGB.

Me: That's a little unusual isn't it?

Buffy: Yes sir, we must be out of the right hand overdrives. Is there anything else I can do for you?

Me: No thank you Buffy, I think you've told me everything you know about it and more. Good-bye.
